For the Salmon Bites:
- 2 Salmon Fillets, skin removed, sliced into bite-sized pieces
- 1-2 tbsp. Olive Oil
- 2 tsp. EACH: Garlic Powder, Dried Italian Herb Seasoning, & Salt
- 1 tbsp. Sweet Paprika
- 1/2 cup Panko Breadcrumbs
- 1/3 cup Honey
- 1-2 tbsp. Hot Sauce
For the Healthier Chipotle Sauce:
- 1/2 cup Plain Greek Yogurt
- 1/4 cup Mayonnaise
- 1 Chipotle Pepper (from canned chipotles in adobo sauce)
- 1 Garlic Cloves, peeled
- Juice of 1 Lime
- 1 tbsp. Olive Oil
- 1 tbsp. Honey
- Salt & Black Pepper, to taste
Instructions
- Combine the panko breadcrumbs and all seasonings in a large container or bowl. Add the sliced salmon and toss to coat the salmon in the mixture.
- If you want extra crispy, dip the salmon bites in a beaten egg and more panko breadcrumbs.
- For extra color, sprinkle with more paprika.
- Add to your air fryer and drizzle with the olive oil.
- If using the Air Fryer: Bake at 380F for 8-10 minutes, until fully cooked and crispy, flipping halfway through.
- If using the Oven: Bake at 425F for 10-15 minutes, until fully cooked and crispy, flipping halfway through.
- In a small bowl, mix the honey and hot sauce together. Add to the cooked salmon bites and toss to coat.
- To make the chipotle sauce, combine all ingredients in a food processor to bend until smooth. Enjoy warm!
